The cool weather of fall provides some welcome relief from the muggy hot summers typical of Florida. And as farmers and fisherman strive toward sustainability, stone crab harvesting provides a renewable resource from our seas. Crabbers are encouraged to remove just one claw from each crab, which is regenerated over time.
When purchasing fresh stone crab claws, be aware that they should have a mild sea breeze aroma and should be used within two days. Store them in the coldest part of the refrigerator at 32 degrees immediately after purchasing.
